The sensory impression of food or other substance, and is determined primarily by the chemical senses of taste and smell. The "trigerminal senses", which detect chemical irritants in the mouth and throat as well as temperature and texture, are also important to the overall Gestalt of ﬂavor perception. The ﬂavor of the food, as such, can be altered with natural or artiﬁcial ﬂavourants which affect these senses.
The term natural ﬂavour or natural ﬂavouring means the essential oil, oleoresin, essence or extractive, protein hydroxylate, distillate, or any product of roasting, heating or enzymolysis, which contains the ﬂavouring constituents derived from a spice, fruit or fruit juice, vegetable or vegetable juice, edible yeast, herb, bark, bud, root, leaf or similar plant material, meat, seafood, poultry, eggs, dairy products, or fermentation products thereof, whose signiﬁcant function in food is ﬂavoring rather than nutritional.”
Due to the high cost or unavailability of natural ﬂavour extracts, most commercial ﬂavourants are nature-identical, which means that they are the chemical equivalent of natural ﬂavours but chemically synthesized rather than being extracted from source materials.
Anything that we smell has to contain some sort of volatile chemical. A chemical that evaporates and enters a person's nose. The evaporated chemical comes in contact with sensory cells in the nose and activates them. In the case of taste, a chemical has to activate the taste buds. Taste is a fairly crude sense-- there are only four values that your tongue can sense (sweet, salty, sour, bitter) -- while the nose can sense thousands of different odors. Therefore most artiﬁcial ﬂavours have both taste and smell components.
